2 large golden zucchinis (approx. 800 g)
1 handful of parsley
1 handful of dill
1 tablespoon home-made ground peppers pickled in salt
1 large onion
3 tablespoon cold pressed rape seed oil
200 ml cream
Fry the onion in the oil, then add a third of the zucchini slices. When everything has a little color, put in a sauce pan, add the finely chopped dill and parsley and pour in water and cream until it covers the zucchinis. When it is boiling, mix with a hand blender. You can serve it with roasted peanuts and dill but some feta cheese is also a good choice.
