Baked Apple Star with Chocolate, Raisins and Spiced Walnut Cream

Ingredients:

-  2 large apples
-  2 tablespoons rum soaked raisins
-  bourbon vanilla (for the cream)
-  1 tablespoon lemon juice
-  5 tablespoons cold pressed walnut cream (for the cream)
-  ground cardamom (for the cream)
-  1 tablespoon honey
-  2 tablespoons honey (for the cream)
-  ground anise (for the cream)
-  4 squares chocolate
-  a pinch of ground cinnamon (for the cream)

Cut the apples in half and core them carefully by using a melon baller. Beginning from the hole, form a star with a knife. Mix the lemon juice with the honey and spread it over the apples. Place them in a small baking pan and add 200 ml water. Let the apples simmer covered in the preheated oven for 10 minutes, then uncover and let brown for 5 minutes. Place a square of chocolate in the middle of each star then put back in the oven for 1-2 minutes so the chocolate will melt and fill up the stars.

 

After baking, mix the cold pressed walnut cream with honey and the spices and spread it over the apples. The chocolate parts should not be covered with cream but filled with rum soaked raisins. It tastes great both warm and cold.
