Sour cherry cinnamon rolls with hazelnut flour

Ingredients:

-  430 g wheat flour (for the dough)
-  a pinch of nutmeg (for the dough)
-  1 egg (for the cream)
-  1 tsp. cinnamon (for the dough)
-  2 egg yolks (for the cream)
-  70 g butter (for the dough)
-  1 bag of dried yeast (for the dough)
-  80g powdered sugar (for the cream)
-  a pinch of salt (for the dough)
-  270 ml milk (for the dough)
-  20g oat flour (for the cream)
-  3 egg yolks (for the dough)
-  500 ml milk (for the cream)
-  1 vanilla stick (for the cream)

Mix all the ingredients of the dough together and and knead the mixture by hand or with a machine until it gets sticky (for about 10 minutes). Then let the dough rest for 40 minutes.

To prepare the cream, heat up the milk then add the beaten eggs and stir the mixture. Stir the oat flour with some mizlk until you get a smooth paste then cautiously mix it to the milky cream. Cut the vanilla stick in half and scrape the into the cream. Add the the vanilla sticks to the mixture too then cook the cream ready in 15 mintues with contionous stirring.

After the 40 minutes id over knead the dough thouroughly agin tehn let it rest for another 30 minutes. Next knead it again and roll it to the approximate thickness of a little finger. Remove the vanilla sticks from the cream then spread it on the dough. Sprinkle it with pitted sour cherries then cut and roll it to create the rolls. Place the rolls on a baking tray covered with baking paper.

Bake them on 180 degrees with the air fan activated until they get golden brown.
