Spinach and Blue Cheese Muffins for Breakfast



  • 120 g spinach
  • 75 g blue cheese
  • 3 tablespoon wheat flour
  • 2 tablespoon pumpkin seed flour
  • 4 eggs
  • 4 tablespoon walnut oil
  • freshly ground pepper
  • salt


Set your fan oven to 160 degrees. Chop the spinach and wither in a hot pan with a little pepper and a pinch of salt. Divide the eggs and beat the egg whites until stiff. Mix the egg yolks with the flours, oil, salt, pepper and blue cheese. Stir in the foam carefully and spoon the dough into a muffin tin. It will make 6 large muffins. I did not have baking paper in the tin but it would have been better that way, so I recommend using it! :-)
