Cabbage and Noodles

soba salad with roasted carrots and sauerkraut


  • 1 pack soba noodles (75 g)
  • 2 teaspoon mustard seed oil or sesame seed oil
  • 1 tablespoon sunflower seed oil
  • 1 red onion (80-100 g)
  • 2 small carrot (100-120 g)
  • 1 handful of sauerkraut (100 g)
  • 1 clove garlic
  • 1 teaspoon cumin
  • 1 teaspoon coriander seeds
  • 1 coffee spoon of cane sugar
  • salt
  • roasted sesame seeds or sunflower seeds on top, after your taste


Boil the noodles in plenty of salted water according to package instructions (usually 3-4 minutes of cooking), then rinse well with cold water and drain. Toss with mustard seed oil (or sesame seed oil).


Cut the peeled and halved onion, carrots and garlic into very thin oblique slices. In a mortar, grind the cumin and the coriander into powder with the sugar and a pinch of salt. Heat the sunflower seed oil, toss in the vegetables and the spice mix. Shake and stir over high heat and roast until the vegetables begin to brown but still remain crunchy. Finally, add the squeezed sauerkraut, stir together and heat up again.


Mix the vegetables with the noodles. You can sprinkle some roasted sesame seeds or sunflower seeds on top to suit your taste.
