Apple and Blue Cheese Tart with Fig Jam
Ingredients:
- 50 g sunflower seed flour
- 200 g flour
- 200 g butter
- 110 ml cold water
- 3 apples
- 1 tbsp pomegranate balsamic vinegar
- 4 tbsp yogurt
- 1 level tbsp flour
- 2 sage leaves
- 1 small handful of thyme leaves
- 150 g blue cheese
- fig jam (optional)
- smoked ham (optional)
- 1 egg
Crumble the butter into the flours, then knead it into a dough with 110 ml ice-cold water and a pinch of salt. Chill the dough in the fridge for 2 hours. Slice 3 peeled apples and toss them in a mixture of 1 tbsp apple vinegar, 4 tbsp yogurt, 1 level tbsp flour, 2 finely chopped sage leaves, and a small handful of fresh thyme leaves (or 1 tsp dried thyme from the store).
Roll out 2/3 of the dough and place it in a greased tart pan (or baking tray). Spoon the yogurt-coated apples on top, crumble over 150 g of blue cheese, and if you're feeling bold, add a few teaspoons of fig jam. Meat lovers can also sprinkle over some pieces of smoked ham (e.g., Black Forest). Roll out the remaining dough and lay it over the filling. Press the edges together with the sides of the base, and brush the top with a beaten egg.
Pop it into a preheated oven at 180°C and bake with fan on for about 35 minutes. Enjoy!
