Dried Plum and Beetroot Salad

Ingredients:

- 3 beetroots
- 1 handful walnuts
- 100 g yogurt
- 2 + 2 tbsp walnut oil
- 1 tbsp balsamic vinegar
- 1 handful dried plums
- a few slices of brie cheese
- salt
- pepper

I washed the beetroots and boiled them in hot water for half an hour. Then I took them out of the water and peeled them with a teaspoon. I don’t remember where I saw this teaspoon peeling method, but it works very well. I cut the peeled beets into cubes, and while still warm, tossed them in a mixture of 2 tbsp cold-pressed walnut oil and 1 tbsp balsamic vinegar, then salted and peppered them.

I toasted the walnuts in a dry pan for a few minutes, cut the cheese and plums into small cubes, and sprinkled them over the beets. I mixed the yogurt with a pinch of salt, pepper, and walnut oil, and drizzled it over the salad mix.

Delicious on its own or as a side dish to a good roast meat!
