Chocolate-Raisin Baked Apple Star with Spiced Walnut Cream

Ingredients:

- 2 large apples
- 1 tbsp lemon juice
- 1 tbsp honey
- 4 pieces of chocolate
- 2 tbsp raisins (soaked in rum)
- 5 tbsp cold-pressed walnut cream (for the cream)
- 2 tbsp honey (for the cream)
- a pinch of ground cinnamon (for the cream)
- bourbon vanilla (for the cream)
- ground cardamom (for the cream)
- ground star anise (for the cream)

Cut the apples in half and carefully hollow out the core using a melon baller, making sure not to puncture the apple. Using a knife, carve a star shape starting from the hollowed core. Mix the lemon juice with honey and brush it over the surface of the apples. Place them in a small baking dish, pour 2 dl of water underneath, cover, and steam in a preheated oven for 10 minutes. Then remove the cover and let them brown slightly for 5 minutes, then put back in the oven for another 1-2 minutes, placing a piece of chocolate in the center of each star. As it melts, it will flow into the star’s “arms.”

Once out of the oven, spread the walnut cream mixed with honey and spices over the apple between the star’s arms, and fill the chocolate sections with the rum-soaked raisins. Can be served warm or cold.
