Walnut Oil Cauliflower Salad with Sprouts
Ingredients:
- 1 head of cauliflower
- 4 tablespoons cold-pressed walnut oil
- 1 handful of walnut halves
- 2 cloves of garlic
- 1/4 teaspoon salt
- Juice of half a lemon, freshly squeezed
- A pinch of freshly ground pepper
- Fresh sprouts for serving
I blend the walnuts, walnut oil, garlic, and lemon juice in a food processor. I season it, then set it aside. I break the cauliflower into florets, cook them in boiling salted water until just tender, then drain them. I place them on a plate, drizzle with the dressing, and serve garnished with fresh sprouts.
