Gooseberry Heaven

Ingredients:

- 140 g flour
- 3 eggs
- 17 g sugar
- 35 g hazelnut flour
- 1 tsp baking powder
- 170 g melted butter
- 1 tsp vanilla extract
- 1 handful toasted almonds
- 2 handfuls of carefully cleaned gooseberries
- coffee (optional)

Mix 3 eggs with 17 g of sugar, then combine with 140 g of flour, 35 g of hazelnut flour, and 1 tsp of baking powder. Fold in 170 g of melted butter and pour in 1 tsp of vanilla extract. Toss a handful of almonds into the oven, toast them for 10 minutes at 180°C, chop them up, and mix them into the batter.

Pour the batter into a baking tray (or pan) lined with parchment paper, and sprinkle 2 generous handfuls of cleaned gooseberries on top.

Bake at 180°C with fan for 25–30 minutes. This treat is heavenly — especially with a cup of coffee!
