Ginger-Pickled Daikon Radish

Ginger-Pickled Daikon Radish

Ingredients:

- 500 g daikon radish
- 5 cm piece of fresh ginger root
- 2 lemons
- 25 g sugar
- 1 tbsp pumpkin seed oil
- 1 tsp salt

Preparation:

Peel the radish and cut it into julienne strips.

Peel and finely grate the ginger, then squeeze out the juice. Mix the juice with the sugar, lemon juice, finely grated zest of half a lemon, and salt, then toss with the radish. Let it marinate in the fridge for at least 4–6 hours before serving.

Before serving, drain and mix with the pumpkin seed oil.
