Sunflower Seed Flour Crackers – Gluten-Free

Ingredients:

- 100 g sunflower seed flour
- 100 g cheddar cheese
- 60 g butter
- salt (to taste)

Crumble the flour with the grated cheese, season with salt to taste. Dice the cold butter and work it into the mixture. Knead everything thoroughly (a food processor is helpful here, and you can add a little water if needed), then wrap the dough in cling film and let it rest in the fridge for at least one hour (ideally overnight).

Once the dough has come to room temperature, roll it out between two sheets of parchment paper (to prevent sticking) to about 4 mm thickness. You can sprinkle sunflower seeds on top and gently press them into the dough with a rolling pin.

Cut the dough into strips using a knife or pastry wheel, then bake at 180°C (fan setting) for about 10–12 minutes. Be careful not to overbake – they’re best when light golden brown and nicely crispy.
