Green Oil
Ingredients:
- 2 bunches of fresh parsley
- 2×1 liters of water
- 2 dl sunflower oil
Preparation:
Pour cold water into a bowl (even better if you use ice).
Bring the water to a boil in a pot, and once it’s boiling, add the parsley. After about 10 seconds, immediately transfer it to the bowl of ice water to cool. Squeeze out the excess moisture, then place the parsley into a blender along with the oil and blend thoroughly. Once done, take a clean, thin kitchen towel or a muslin cloth and strain the green oil through it. This will give you a perfectly smooth, beautifully vibrant green oil that you can use to finish off practically any dish.
