Vegetarian Caesar-Style Salad

Ingredients:

–For 2 people–

For the dressing:

  • 5 tablespoons olive oil
  • 2 tablespoons honey-mustard sauce
  • Juice of 1/2 lemon
  • Zest of 1 organic lemon
  • Salt and freshly cracked pepper to taste

For the salad:

  • 10 g grated Parmesan or Grana Padano
  • 1 head romaine lettuce
  • 2 slices smoked tofu
  • Additional grated Parmesan or Grana Padano to taste (for topping)
  • 2 slices whole grain bread

Preparation:

Prepare the dressing: place the olive oil, honey-mustard, lemon juice, lemon zest, salt, and pepper into a well-sealing container or lunchbox, then mix in the grated cheese. Shake thoroughly and refrigerate until serving.

Wash the romaine lettuce well, then tear the leaves onto a plate. Toast the bread slices and tofu in a hot pan.

Pour the dressing over the salad, then arrange the toasted tofu and bread on top. Finally, sprinkle with more grated cheese and it’s ready to serve!
