Chocolate Muffins with Sunflower Seed Flour
Ingredients:
–For 8 pieces–
- 75 g sunflower seed flour
- 75 g wheat flour
- 1 small pinch of salt
- 9 g baking powder
- 2 small ripe bananas (145 g)
- 15 ml sunflower oil
- 2 eggs (size M)
- 100 ml plant-based drink or milk
- 50 g chocolate chips
Preparation:

Blend the eggs, plant-based drink (or milk), oil, and bananas until smooth.
Mix the sunflower seed flour, wheat flour, baking powder, and salt, then gradually add to the wet mixture. Whisk until smooth and lump-free. Fold the chocolate chips into the batter so every muffin gets a chocolatey bite.
Spoon the batter into muffin molds and bake in a fan oven preheated to 180°C (356°F) for 20 minutes, until golden brown.
