Dill Cucumber Salad with Radish
Ingredients
Serves 3
- 1 cucumber (English cucumber)
- 8 radishes
- 1 tbsp dill (fresh or dried)
- 4 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp maple syrup
- 1 clove fresh garlic
- a pinch of salt
Preparation
Ready in 5 minutes
Cut the cucumber in half lengthwise, then use a spoon to scrape out the seedy, soft center. Slice into thin half-moons.
Thinly slice the radishes and add to the cucumber. For the dressing, simply mix all remaining ingredients well, then pour over the vegetables.
