Cottage Cheese & Blueberry Muffins

Ingredients
—for 11 muffins—

  • 2 ripe bananas (200 g)
  • 2 medium eggs
  • 170 g cottage cheese
  • 20 ml sunflower oil
  • 150 g almond flour
  • 100 g wheat flour
  • 10 g baking powder
  • 50 g fresh blueberries

Preparation
Blend the bananas, cottage cheese, oil, and eggs until smooth.

In a separate bowl, mix together the almond flour, wheat flour, and baking powder. Gradually add the dry ingredients to the banana mixture in two parts.

Whisk the batter until smooth and lump-free. Gently fold in the fresh blueberries.

Spoon the batter into silicone muffin molds, filling each about three-quarters full.

Bake in a preheated fan oven at 180°C for 26–28 minutes, until golden brown and soft.
