Green Pea Cream Soup with Pumpkin Seed Flour

Ingredients:

  • 500 g green peas
  • 1 liter broth
  • Salt and pepper to taste
  • 1 small bunch of fresh parsley
  • 1 small teaspoon dried thyme (optional)
  • 3 tablespoons olive oil
  • Cheese of your choice (grated, for topping)
  • 2 slices of bread
  • 1 clove garlic
  • 2 tablespoons olive oil (for the croutons)
  • 1 tablespoon oregano (for the croutons)
  • 3 tablespoons pumpkin seed flour

Preparation:

Cook the green peas in the broth with the seasonings.

Cut the bread into small cubes, mix with olive oil, oregano, and garlic, then place them on a baking tray lined with parchment paper. Bake in a 250°C oven for 3–5 minutes until crispy.

After 10 minutes of cooking, blend the peas together with the olive oil and pumpkin seed flour. Strain through a fine sieve and serve.

When serving, you can grate some cheese on top and add the croutons.
