Walnut Cream Muffins

Ingredients

For the muffins:

  • 5 tablespoons oat flour
  • 5 tablespoons almond flour
  • 2 tablespoons linseed flour
  • A handful of chopped almonds
  • 4 tablespoons sugar
  • 2 tablespoons plain yogurt
  • 3 eggs
  • 1 packet baking powder
  • 3 tablespoons walnut oil

For the walnut cream:

  • 6 teaspoons walnut cream
  • 250 g mascarpone
  • 3 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 180°C.
  2. Mix the dry ingredients evenly in a bowl.
  3. In a separate bowl, whisk the eggs with the sugar until fluffy, then add the yogurt and walnut oil.
  4. Gradually combine the egg mixture with the dry ingredients to form a smooth batter.
  5. Divide the batter into a muffin tray and bake for about 30 minutes, checking doneness with a toothpick.
  6. For the walnut cream, mix the ingredients until smooth, then decorate the cooled muffins with it.
