Walnut Cream Muffins
Ingredients
For the muffins:
- 5 tablespoons oat flour
- 5 tablespoons almond flour
- 2 tablespoons linseed flour
- A handful of chopped almonds
- 4 tablespoons sugar
- 2 tablespoons plain yogurt
- 3 eggs
- 1 packet baking powder
- 3 tablespoons walnut oil
For the walnut cream:
- 6 teaspoons walnut cream
- 250 g mascarpone
- 3 tablespoons powdered sugar
Instructions
- Preheat the oven to 180°C.
- Mix the dry ingredients evenly in a bowl.
- In a separate bowl, whisk the eggs with the sugar until fluffy, then add the yogurt and walnut oil.
- Gradually combine the egg mixture with the dry ingredients to form a smooth batter.
- Divide the batter into a muffin tray and bake for about 30 minutes, checking doneness with a toothpick.
- For the walnut cream, mix the ingredients until smooth, then decorate the cooled muffins with it.
