Ingredients:
- 110 g fresh dates
- 110 ml water
- 1 medium carrot (80 g)
- 1 small piece of ginger (approx. 12 g)
- 1 egg (size M)
- Juice of 1/2 orange (approx. 20 ml)
- Grated zest of 1 organic orange
- Large pinch of cinnamon
- Small pinch of salt
- 80 g almond flour
- 50 g whole grain flour
- 100 g fine rolled oats
Preparation:
If needed, remove the pits from the dates. Pour the specified amount of water over them — if you are using dried dates, use HOT water — then after soaking for 2–3 minutes, blend them. Your homemade date paste is ready. You will get 140 g, and you will use all of it.
Place all the dry ingredients (cinnamon, salt, baking powder, almond flour, oats, whole grain flour, orange zest) into a bowl and mix them well.
In another bowl, whisk together the wet ingredients: the egg, date paste, grated carrot, grated ginger, and orange juice.
Add the dry mixture to the wet ingredients all at once, and mix them together—by hand or with a whisk—until combined.
Press the mixture into a 24×17 cm baking tray lined with parchment paper; about 1.5 cm thickness is enough.
Bake at 180°C, with top and bottom heat, for 20–22 minutes.
