Chocolate cookies

Ingredients (for 10 pieces)

  • 85 g pitted dates (fresh, not dried)
  • 40 ml lukewarm water
  • 35 g butter (room temperature)
  • 1 egg (size M)
  • 80 g oat flour or wheat flour
  • 20 g sunflower seed flour
  • 4 g Date Delight spice mix
  • 2 g phosphate-free baking powder
  • 1 large pinch salt
  • 10 g dark chocolate (chopped)

Preparation 

We place the dates into a food processor and blend them with the lukewarm water (it does not need to be completely smooth). Next, we add the butter and process until combined. Then, we add the egg and mix it in as well.

Finally, we sift in the flours, spice mix, salt, and baking powder, and stir until smooth. We drop half-tablespoon-sized portions onto a baking sheet lined with parchment paper, then top them with the chopped chocolate. We bake in a preheated oven at 175°C (350°F) using conventional (top and bottom) heat for 13–14 minutes.

P.S.: These cookies are also fantastic without chocolate—feel free to top them with hemp seeds or pumpkin seeds instead!
